Being gluten free doesn’t mean flavour free. Finding alternatives to traditional flours can be experimental at best and a complete disaster at worst! I was excited to read Eat Happy Too, the second gluten free cookbook from Anna Vocino which includes sauces and pastries, cakes and biscuits which all traditionally rely on gluten.
I’ll be perfectly honest, this cook book contains a lot of meat dishes so I was a little disappointed that there weren’t more vegetarian and vegan recipes. Having said that, many of the meat substitutes available in supermarkets these days could easily be swapped. I did also wonder at the availability of some of the ingredients in the UK (the writer is US based): I’ve never spotted coconut nectar or spaghetti squash in my local shop…
I liked the way that many recipes offered dairy free or an alternative to make it so. This book attempts to reduce sugar but author Anna Vocino stresses that this book is not for those trying to diet. The cakes, muffins and cookies would all be favourites for my kids but the reduced sugar content makes me feel better as a mum too 🙂
There are the usual starters, mains and sweets sections as well as side dishes and sauces. There are also cocktails: remember these for your gluten free guests too!
I have highlighted a few recipes that caught my eye and I intend to try out: baba ganouj, lemongrass thyme cauiflower steaks, mango orange dreamsicles, cilantro green goddess dressing (I am obsessed with coriander so will be making this asap!)
The photos in the book are very tempting: they are bright and colourful and convey the message that gluten free food is interesting and delicious.
I think Eat Happy Too is a good source of culinary inspiration for all kinds of dietary needs and look forward to trying out some of these recipes with my family.
